Sickness

So I am now on official day 4 of going vegan.... well kinda. I had a minor problem last night with taco bell! They made me my bean and rice burrito with a jalapeno sauce that was made of mayo. Stupid! but that's ok no big deal, everything else has been so far so good. I thought that it would be harder than it is, but it hasn't really been that bad. The most challenging thing is of course trying to eat out at a modern day restaurant because there is butter on EVERYTHING!!!!! This is why I love Thai food there isn't any hidden ingredients!

So I am a little stopped up and feeling a little under the weather. It could be from a few things.... First off Brandon was sick for about two weeks. Second lots of change in the weather here lately. Third it could be my body detoxing from meat and dairy, in which you have similar symptoms. Weird??? Or it could just be everything! haha I watched Oprah yesterday and she had a whole show on foods you should put in your body. I thought it was great, and justified even more what I was already thinking! I really have enjoyed planning and putting thought into everything thing I eat. I have already seen a difference, I have lost about 5 pounds already! I have also been trying to work out. I really enjoy running, and have just started running on a treadmill which is not as good but still good.

I only have 10 more days until my big test!!! I'm so nervous about it, but I have been studying! Hopefully I can do well and pass the first time! Which I will cause I'm smart and can do it! Just be praying and thinking good thoughts while I am taking it on Saturday the 6th at 2 pm!

Day: 1


So today was the first official day of going vegan. It has gone pretty well, and I have not been hungry or too weak or anything! I started off with some apple cinnamon oatmeal I made from scratch and some coffee. For lunch I had some carrots and some beans and rice. Dinner, though was by far the BEST! I made jasmine rice, fried tofu and butternut squash, zucchini and sweet potatoes. It was pretty much amazing!

I am also going to try a yoga class in the morning at 5:30 AM!!! I have never done yoga, but have always been interested in it so I figure why not try it! Its an early class which means there wont be a ton of people to make fun of me! Haha I am so un-coordinated!

I am still studying for my TEXES exam, and getting more and more discouraged. I really need to think positively on this though, because its in two weeks, and I must pass it! Just pray I do well on it so that I don't have to take it again! My test is on February 6th and 2:00pm! PRAY ALL DAY! My superheroness to pass the texes exam!

It's that time again!

So I know I am a terrible update blogger, so therefore I am going to really try this time. I have had a lot going on the past few months!!! I am so excited to share everything!

Two weeks ago I started a teacher certification course through Region XI in Fort Worth. Pretty much this program will prepare me to be a teacher by this next fall! I am so busy because there is so much work to be done for the program! I have an online class, an Integrated Field Experience course, a Harry Wong book study and the classes themselves to go to. I am also in the process of getting ready to start substitute teaching. I have never done this before, or been in charge of kids before, so hopefully all will go well. I am so excited to start this chapter of my life, because I am truly passionate about it. I don't think I have ever felt this way about anything! I am also in the process of finding out more about becoming bilingual in Spanish. I really want to be fluent, so that I can teach at a school that is bilingual, and also to learn more about their culture and eventually travel and teach English. I just find the Spanish culture one of the most interesting, and I love the people I meet! I have my TEXES test on February 6th. This is the test that determines whether or not I can be a teacher. I have to pass it with an 80% or higher! So please please please be praying I pass it the first time!!!!

Another thing going on in my life is I am working out again. I worked out a total of 5 days last week! I really enjoy working out, and would like to keep doing so! It makes me feel and look great! I also packed on a few pounds from eating too badly at Christmas and just in general.

I am also reading a book called The Kind Diet by Alicia Silverstone. It is pretty much about going Vegan and then giving up all processed foods and all sugars. I find this very very interesting, because I have always wondered about health risks of eating or not eating meat. The way she describes everything is great! Like she puts it in terms that anyone can understand. It just makes me so excited to actually try and see what that kind of life could be like! So starting tomorrow I am going vegan for the next 4 weeks. That means no meat, dairy or any animal products. I want to do it not only for the animals but also for all the amazing health benefits. They say vegans have a lower body weight, better immune system and are at a lower risk for heart disease and cancer! Sounds win win to me! I will update daily to tell you how it is going. I am sure it is going to be hard because I have never done anything like this before! So we'll see how it goes!
